So my first question would be, is there any deeper reason why Prof. Snape and Lily Potter both have a doe as Patronus or is it just to express that they've always been what one would call soulmates? And why did the Patronus appear in the Forest of Dean at that moment?
Snape's discussion with Dumbledore and his casting of the Patronus occurred way earlier than that as Dumbledore obviously was still alive, so at maximum during the events of the Half-Blood Prince. Is this just one of those various moments of stuff "magically" appearing when needed as the Gryffindor Sword and the Room of Requirements use to do or is there a more elaborate reason the movie just didn't delve into or am I just too stupid to get it?
I believe so. This memory takes place at least 16 years after Lily and James' murder, and I believe it's likely to be the first time Snape shared his feelings with Dumbledore since the day he broke down in tears upon hearing of Lily's death. Considering that Dumbledore probably knows how Snape treats Harry, he may well be surprised to hear that Severus still cares so much for her, but so little for her son. I don't think they were soulmates, Snape's infatuation with the dark arts and his prejudice against muggleborns were completely antithetical to Lily's ancestry, kindness and goodness.

This happens before he finds out about his father being a stag in his animagi form, so it can't be intentional. In the book of The Half-Blood Prince, when Nymphadora Tonks casts a patronus to send a message, Snape comments on the fact that her patronus has changed into a huge four-legged beast which Harry is unable to identify , towards the end of the book it is revealed that it has actually transformed into a Werewolf, as she has fallen in love with Remus Lupin.
Aberforth Dumbledore 's patronus is a goat, and he was once charged with performing "inappropriate charms on a goat". It may even be the case that Lily's patronus is a doe because a doe is the female of a stag, and Lily loved James, though there's no hard evidence on this that I'm aware of.

If the Patronus located the target, then e. Voldemort could only send Patronus to find Harry. Or vice versa, Dumbledore could track down Voldemort long before the Second wizarding war I believe the question about why Dumbledore didn't just hunt down Voldemort has been answered either on stack or Quora.

Well, there's no canon answer to that, but surely someone will give a good subjective answer that will be a good fit. I don't have my book here but if you do, around that area there is a quote about the movement of the doe, where if I remember correctly it stands still for quite a while before moving off. I always imagined that Snape would put the doe in an area of the woods, wait for someone to appear as they were wont to do if a brightly lit doe were to suddently appear to investigate , and if they didn't he would move to another area.
Kind of like going fishing, using the doe as a lure. Don't have the quote on me though so I may be wrong in that assumption. Xantec I credit that to the ubiquitous gaze.
If muggles like Leonardo da Vinci assuming he issss a muggle can do it with paint I've no doubt that magic can produce a similar effect. In the world of magic anything is possible.
Then again, in the dead of night when surrounded by a velvety darkness, coming out of a half-sleep and being approached by a glowing doe a second could feel like an eternity.

Harry, also witnessing this spectacle, assures Ron that he and Hermione love each other only platonically, and tells him how important he is to their trio.
Harry not only shows another side to his innate courage, but also his growing ability to trust others. Despite not knowing if friend or foe sent the doe Patronus, and after the nearly disastrous encounter with the bogus Bathilda Bagshot , Harry takes yet another leap of faith by following the doe in the hope that this time it was sent to help.
However, youthful curiosity may have helped to override caution, and Harry avoids consulting Hermione, knowing she would be far more suspicious and leery following their near-fatal experience in Godric's Hollow. It is confirmed, however, that the silver doe was indeed dispatched to help; the question now is, who sent it and why? An adult reading this chapter may also note that Ron mentions nothing about having told Bill and Fleur where he was going, or even that he was leaving, when he departed Shell Cottage.
This rather leads one to wonder what Bill and Fleur thought when they found his room empty. It is open to question how Snape found Harry, given the protective spells Hermione had set around them. This must, of course, be supposition, but we already know that many spells are limited by distance, Apparition being one; it is likely that once he was within a few miles of Harry, Snape could use Legilimency to see what Harry was seeing, and thus determine where he was. This would be easier for Snape because he had previously spent time in Harry's mind. After learning the Trio's general whereabouts from Nigellus, it appears Snape sent the Patronus in the hope that Harry would see and follow it to where Snape hid the Sword in the pond.
It will be seen in a later chapter that more than one Patronus can be cast at a time, and there may have been multiple ones roaming the forest searching for Harry. This is the first time Snape's Patronus is seen.
It is learned later in the book that its form is somehow related to Lily Potter, and for a specific reason. But what you do in between, you did not tell them. So the memory snape was giving to harry have a time span.
